Brinjal thokku is regular dish in my mom home.Be careful in selecting brinjal because in market two types of available.One is purple color and another one is green color.Always choose purple color because its give nattu kathirikai taste and it have small seeds.This recipe was i saw in kannammacooks website,i did some changes according to my family taste.My son and brother favorite dish and its finger licking recipe.
Ingredients
Brinjal - 250grams
Onion -2 nos
Tomato - 2 nos
Ginger garlic paste - 1 tbspn
Tamarind - 1 gooseberry size
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 3/4 tbspn
Coriander Powder - 1 1/2 tbspn
Gram Masala - 1 tspn
Curry Powder - 1 tsp
Curry leaves - few
Mustard - 1/2 tspn
Cumin seeds - 1 tspn
Salt
Oil
Step by Step picture
Soak tamarind in water and extracted tamarind water
Heat a pressure cooker and add oil
Once oil heat add mustard,cumin seeds and curry leaves
Add onion and saute it
Add ginger garlic paste
Add tomatoes and fry until all tomatoes mashed
Add brinjal and mix it
Now add all the powder and salt,mix it
Now add extract tamarind water
Serve with hot rice
